Mango Soft Serve is a great substitute for regular ice cream! Here is a recipe that I came across in the April/May Paleo Magazine, that I think all of you would love!
3 cups Frozen Mango's-Or any other frozen fruit
1 can full-fat coconut milk
1 TBSP raw honey
1/2 tsp ground cinnamon
1/4 tsp Sea Salt
Place the frozen mango cubes in a food processor fitted with the steel blade. Process until finely chopped, (mango will look crumbly). Add coconut milk and process until the mixture is thick and smooth, stopping occasionally to scrape down the sides of the bowl with a rubber spatula. This process will take several minutes. When smooth, add the honey, cinnamon, and salt and pulse to combine. Serve immediately.
